Spinach, Kalamata Olive, And Feta Tortilla Bites

6 - La Tortilla Factory Tortillas
1 cup spinach (chopped)
2 garlic cloves
¼ cup scallions
½ cup grape tomatoes
½ cup kalamata olives

½ cup feta cheese
½ tsp sea salt
1 tablespoon Nutiva Organic
Buttery Coconut Oil

Preheat oven to 350ºF

Take a mini cupcake pan and grease each tin using Nutiva Organic Buttery Coconut Oil.

Next, using the top of a small mason jar or a round cookie cutter, cut 4 small circles out of each La Tortilla Factory
tortilla.

Stuff cut tortilla rounds into greased cupcake tins and bake for 8 minutes.

Chop spinach, garlic, tomatoes, scallions, and olives and place in a medium size bowl.

Fold feta cheese into mixture, and sprinkle with sea salt.

Gently stir until ingredients are well combined.

Add mixture to pre-baked tortilla rounds, and bake again for 10 minutes.

Remove from oven and serve immediately.

Makes 24 bites.
